Hi folks,
I have done several turkeys all with great sucess.....but I have never done one at 325.
I have the following questions????
Is the smoke ring the same as it would be at a lower temp?
At what time did you foil the legs and wings?
 
Hmmm... I've never felt a smoke ring to be a priority on poultry-- I've always done them at 325-350, so I have no reference to compare. I've foiled the wing tips about half way (90 minutes?)-- mainly for cosmetic reasons-- but have always left the legs alone.
