It has finally hit me. After reading numerous times about avoiding low and slow turkey, what CAN happen DID happen. Years ago, with the cheap electric smoker, Lure Jensen, I made the fatal low temperature mistake with turkey.
I had many sucesses with that smoker but one Christmas I brined 14 beautiful turkey breasts and smoked them. SOMETHING smelled foul. I remmember returning them all to Kroger. I told the meat man they were bad.
It was my technique that was bad. Those smokers produce a cold smoke around 160? It must have been a breeding ground for bad bugs and I am amazed I didn't make someone deathly sick.
For years I had wondered about that smoke...I had many sucessfull ones until that day.
325 and up for turkey makes sense.
