Turkey - Couldn't get up to temperature


 
You will appreciate the second dome vent. You don't need to use it all of the time but it sure helps to get higher temps. I have a Nomex in my smoker as well. I can open it up and snuff it out pretty quickly because it's pretty much air tight. Winds still affects it though.
 
Is there a minimum temperature (outside) for getting the smoker hot enough? I plan on doing a 10-12 lb breast on Thanksgiving. I'm in NY and it may be in the 30s.
Also -- Should I go for the 18" rather than the 22"? I'm guessing that the 18" is easier to get/keep hot?

Any other turkey tips?

Wind is without a doubt your biggest enemy. I have an 18WSM and had a 22 before which I sold but...I'm not going to get into the pros and cons of either because there are good arguments for both, it depends on what capacity you think you need.
That's a big breast. R U brining it? I would cook low & slow watching your temps. Use mild smoke, apple or any fruit wood but go easy. Take it up to 160. Good luck
