Turbinato sugar ?

I have read this term a number of times. What exactly is this? Is it sugar put through a coffee/spice grinder? thanks in advance.

Hi Ines,
Turbinado sugar is (slightly) less processed than white or brown sugar.
It comes from the 1st pressing of the cane, hasn't been bleached, and still retains some molasses in the crystals.
It has large crystal and is a light blond color.
It does not burn as easily as white or brown sugar.

I forgot to mention that turbinado sugar can often be found in supermarkets in a brown bag labeled as "Sugar in the Raw" (at least in SoCal).

Hi Ines!

Many recipes call for Turbinado because of its higher burn point. However, it is really not needed when smoking. Regular sugar will start to burn around 265? and Turbinado burns between 320-367?(this according to an e-mail inquiry on my part).

So, if you smoke below 250?, then the sugar will not burn on you.

Because of the huge price difference, I never use turbinado. I DO cook all my meats at 225? and have done the Carson's method of rib prep....saucing both before, and during the cooking cycle. Never had any sugar burn on me.
