Trying my WSM for the first time this morning.

I just put my WSM together the other night and I finally get the chance to try it out.
I picked up some pork shoulder cut up in rib-like shapes - they were labeled as Boneless Pork Ribs - Western Style. I put some rub on them last night and let it sit on them for about 10 hours and put them on to smoke around 7:45 this morning. My WSM is holding steady at about 240F. I am anxious to see how this works out

Those will cook pretty quickly, guess you'll be eating pork for lunch. Good luck with your cook.
I grew up in Dayton, where abouts is Thornville?
 
Thornville is about 30 miles east of Columbus. I grew up in Springfield and only moved here about 8 or so years ago. The cook/smoke went well. I never did get a chance to check the internal temp but after about 3.5 hours of cooking I picked one of the rib pieces up and it fell apart. There was a smoke ring deep and pink more than 1/4" deep. All of the meet pulled apart really quickly. I separated out the think fatty parts and then threw it all into a wrap of aluminum foil to keep warm. I then made a small finishing sauce out of cider vinegar and sweet baby ray's bbq sauce and poured it over the meat in the aluminum foil. Took it to a party/cook-out and it didn't last long - everyone said it was great. I am really pleased that my first smoke in a WSM went well. Sorry no additional pictures - I was really pressed for time getting ready for the cook-out.
