Trimming back ribs from COSTCO??

I plan on smoking 12 racks of back ribs from costco for the super bowl. The meat is
never consistant and does not cook evenly. Any tutorials or advice on how to trim and how much to trim off?? When I buy from butcher the ribs are always nicely cut but I cannot afford buying 12 racks.

I've bought baby backs from Costco several times. They were all the same as the ones I buy from Restaurant Depot and the like in cryovac packs...

Most of the ones from Costco even have the membrane pulled off. I wash and rub...

Are you expecting every pig to be the exact same?
 
Never had this problem, John. Baby back ribs don't need to be trimmed usually. Just keep an eye on the ribs while they cook. So long as they're mostly the same size they'll all cook at about the same speed.

Maybe you can elaborate as to the difficulty you've had in the past?
 
I'd say that if you have some racks that are significantly smaller than others, try loading the smaller ones together on the lower grate. If you do find one grate of ribs is cooking faster, by grouping to size, you can take it out sooner.

Thanks for the feedback. The problem I have is some slabs even have two layers of bone on some portions. Other areas the meat is soo thick it neve cooks all they way. Perhaps my costco is no good. Have others had same problem?
 
The Ribs I have always found at Costco Her in Sacramento are Swift Brand which I find to be very consistant. And yes, with the membrane removed.
 
I have had the same problem with Swift from Costco. I smoked 3 slabs this weekend and was not happy with about half of the ribs. I don't know what is going on, but there us a really thick end with extra bones that are not good even if they are cooked to perfection.
 
I've had a few racks with "Double Bones," and they were definitely problem-cooks (needed far longer on the pit than the other racks). One was at a party last year and we figured it a Mutant Pig and that the processing plant was most likely in Springfield, not too far from the river that once contained Blinky the 3-eyed fish.
 
Honestly with Costco's liberal return policy I would recommend returning the uneaten portion. You can likely get an exchange if not a full refund. This sounds like a faulty product.

I always buy my baby backs at Costo and have never had any issues as described. I too find that most often the membrane is removed for me. First time i spent considerable time trying to remove it - only to realize it wasn't there...they don't grow 'em smart on the west coast...

but like Dave said - any problems just take 'em back - minus the meat.
