Tried Tri-Tip for the very first time...


 
I like to reverse sear my Tri-Tips. Will smoke em with red oak till internal reaches 100. I then move it over the coals and sear both sides till internal reaches 125. I then remove and let rest about 15 minutes under a foil tent. I don't wrap it up tightly because I don't want it to cook anymore.........
