How do I get my thermometer calibrated. I have a full lit chimney and 1/2 of unlits going full tilt untill all greyed over and all vents open to do a high heat chicken cook and the therm is only saying 250 at the lid. When I put my candy therm in the holes in the lid ( the trend I mounted) it reads closer to 350. I just purchased this therm from the BBQ store online about 2 months ago. For all I know the thing was never correct to begin with
 
without getting too technical (elevation, etc)

you can check to see if your thermometer is properly calibrated by placing it into a pot of boiling water.

Your thermometer should read:

100 degrees Celsius
212 degrees Farenheit

...if properly calibrated, of course.

If it doesn't, then I'm not exactly sure if there's much you can do. Hopefully others with more personal/professional experience will reply -- I'm certainly curious.

Check the back for a slotted screw or bolt.
"EXTERNAL RESET: A slotted-hex adjustment head
offers screwdriver or wrench use to field calibrate the
thermometer. This feature allows maximum accuracy at a
selected area of temperature range. O-ring gasket
prevents leakage and maintains weather tight seal. Note -
use well agitated bath and accurate test thermometer
when making any adjustment."

I'm guessing place the tip into boiling water. You know that's 212. Note how many degrees your thermo is and manually adjust for difference. Hope that helps.
