Transitioning to gas, need hamburger help.


 
So that air movement makes a gas grill operate more like a convection oven (if the lid is closed, of course)?
Yes, sort of. There isn't a fan in there pushing the air up, but there sure are more cubic feet per minute of air coming into a gas grill than a charcoal grill for sure. It's just the combustion process. Did you ever use a wood stove before? You know how when the wood is on fire, it is pulling a lot of air in for the combustion reaction (and pumping a lot of air out the chimney) and if it dies down and the fire goes out, it is just the heat rising, which happens slower when there is no combustion reaction, pulling in oxygen and kicking out carbon dioxide. So I think of the gas grill like the wood stove burning hot, and charcoal like the wood stove embers. Yes, the gas grill is MORE like a convection oven, but that is not how it is designed.
