Today's Rib Cook/modified minion method with pics

Cooked a Rack of Ribs today using a modified minion method I saw on another forum See pic.
Put about 12 lit Briquettes on the unlit.
cooked just under 4 hrs at 250ish. Had to kepp a somewhat closer eye on the temps as compared to the regular minion method, but used less charcoal. guessing about 100 briquettes. Will check to see how much leftover charcoal, there is tomorrow.

Ribs were great not much smoke, brother came for dinner and he's not a big fan of smoke.Tender and juicy not fall off the bone tender but easiley pull off the bone.

will try this method a time or two more before making up my mind on it.

When I make ribs I almost put as much "effort" into cooking them to the "correct" (for me) doneness.

I get somewhat "upset" if I cook them untill they fall off the bone. Although that's they way a lot of people like them. Just not me.

Plus they tasted great, almost wish I would have cooked a second rack to freeze. I've never froze leftover ribs but I hear their pretty darn good. Oh well maybe next time.
