Wife bought some pork hocks, raw (unsmoked) accidentally, thinking she could use them in her pea soup recipe. Needed to smoke them (as she usually uses a ham bone) to get then flavor into the soup. Thought I would do some ribs at the same time...

A nice warm -5C here today so actually pretty nice BBQ weather for Feb!

Also first run using the new Signals/Billows on the S6. Holding a PERFECT 245 (grill level probe) and 225 (BBQ thermometer) the entire time effortlessly.

Also first time trying the "boat" method too... Little chunks of apple wood mixed in the the lump charcoal.
