Today's Pork Butt results...

I removed 18 pounds of Pork Butt after smoking for a little over 17 hours and allowed them to rest for 2 hours in a cooler wrapped in HD aluminum foil. The results were as follows:

2 of the 3 butts were the best I've ever eaten. Moist, tender, and delicious. The other butt was very good as well, but it just wasn't as moist as the other two.

I injected one of the two large butts, but after 17 hours on the smoker and not getting a whole lot of sleep, I couldn't recall which one had been injected. The small 4 pound butt which was on the bottom rack for the entire smoke was very moist and it definitely was not injected.

Could the injection have caused the meat to cook quicker than the other two? I used the following ingredients for my injection:

1 1/2 cup apple juice
1 cup water
1 cup sugar
1/4 cup salt
1/4 cup rub
4 Tbsp worcestershire sauce
 
Sounds successful to me Bill...great job! I am thinking about injecting a butt at somepoint. Thanks for the recipe!
 
Yes, injecting can cause a quicker cooking time but, like the rest of Q, that's not carved in stone.
