Well, today is going to be a great day to start a great weekend. I?m leaving in about 30-45 minutes to drive to Chicago to spend part of the day with my favorite Chicago tour guide Gary Wiviott. Merrill will also be joining us for breakfast. We will be meeting for breakfast at Manny?s Deli which rumor has have the second best pastrami sandwich in Chicago for breakfast, then on to Excel Corned Beef for briskets, across the street to Northwest Cutlery where I plan to have my Chinese cleaver sharpened, purchase an 8? Forschner Chef?s knife, and a nice Arkansas Sharpener. I?ve used a Chef?s Choice for several years and have decided I can do a better job myself. Then we will shop at a couple of used restaurant supply houses in the area. Next on the agenda is a stop at Issac & Stein?s for at least one if not two Copper River Salmon fillets.

To whet our appetite after shopping off the pastrami sandwich we will meet Dale Groetsema and a friend of Gary?s at Peoria Packing. I?m picking up a couple of slabs of ribs (125 lbs) for my nephew?s graduation party tomorrow. I also plan to have about 5 lbs of pork chops custom cut in the 1 ? to 1 ? ? range for grilling this summer, 5 lbs of bacon, and a few lbs of sausage.

After this delightful experience it?s on to Berger Brothers for lump charcoal, alder chunks, briquettes and to another nearby location to pick up some wood chunks.

By this time we should be totally starved and salivating and in need of nourishment. Now the 4 of us will be going to Spoon Thai for a feast fit for Uncle Umberto after successfully being acquitted by a jury removing the charges and defamation the IRS and the Justice Dept have attempted to smear his good name with.

At this point my day in Chicago will end with possible a stop at Al?s Italian Beef for a snack on the way home.

After arriving at home, I will kiss my lovely wife and begin making a tomato salsa for the graduation BBS.

Saturday I will be cooking and serving all of the ribs with a few Buffalo Turds. Sunday I will bask in the compliments and regale the forum with insights of this culinary adventure. /infopop/emoticons/icon_biggrin.gif

Good deal on the Arkansas stone - are you getting a combo (coarse/fine, med/fine, etc.)?

Are you making all those ribs on WSM's?
 
There wasn't a lot of room in the vehicle. I bought 150 lbs of spare ribs,7 lbs of pork chops cut 1 1/2" thick, 5 lbs of bacon, 10 lbs of Copper River salmon, 24 lbs, brisket, some blood sausage, lump charcoal and briquettes, and ate well. We had a great time. Beautiful day in Chicago. Although the traffic was a little hairy. I think quite a few people split from work early today.

I'm cooking all of the ribs for my nephew's graduation party on a mobile smoker I have. The chops and salmon will be on the WSM though.
