Timing


 
I asked the butcher to get an untrimmed brisket in the 10-11 pound range. He got an 18 pounder (only charged me for 10).

So, I have this and a 7 pound Boston Butt going on the smoker. How much time do I need to account for for a brisket of this size? This is bigger than anything I have done before.
 
Depends on the temps you cook at.

I've never cooked bigger than a 13-14 lb brisket, and when I used to cook low and slow they'd take about an hour to hour and a quarter per pound for the bigger ones.

If you cook at say 225 grate, I'd figure 14-16 hours for both. The brisket may take a little bit longer, but I doubt it would be longer than an hour per pound.

When planning to cook, give yourself a few hours leeway as they'll both hold for 4-5 hours easily in a dry cooler.
