Thursday night chuck eye dinner & beer brats

Made some beer brats last week, decided I would wait for a cook before I posted.

Started with pork shoulder and back fat mix and ground it.

Then blended my spices

Have to mix in a fine craft brew for the beer brats

No cooked pics as I took them to a party and cooked them up a day later,but great brats, I make when time permits and everyone enjoys them.
 
Nick, you have left me hangin' like that casing in your son's hands! I really would like to see the "rest of the story".

Very nice looking dinner and brats!!! Where do you get your casings from? Does your son know what he is actually playing with? Last time I made sausage I told my teenager what they were and he wouldn't eat any.
 
You take the love of brats to a whole new level. I envy your dedication and skill to make such good looking brats. I like the color on the chuck eyes.

I get them from Iowa meats off of mission gorge road. The funny thing about that is when I told him it was time to clean up he wanted to put the casing in a ziplock so he could play with it later. I told him it is pig guts and had to be thrown away because it wouldn't last. He had no problem with it being an intestine and was ****ed that I was throwing it away.
