Thinking About Espresso


 
A question for those of you who may be far more expert in the art than I am.
I recently bought naked bottomless portafilters for them. A 51mm for the Casabrews and a 58mm for the KitchenAid. Overall I rarely have any difficulty with them but I've noted especially brewing with the KA, it has a tendency to send little errant streams of espresso everywhere but to the cup. Wondering what I am perhaps doing wrong or could do better to get the nice streams. Otherwise love the results but oh boy I seem to be needing a lot of cleanup LOL
Any tips for someone new to "wide open" brewing?
 
Christmas present for my bride is a Nespresso Vertuo machine. Which can brew single/double espressos up to an 8 ounce mug.

Basically a quick simple way for her to get a first cup on days when she gets up earlier and so doesn’t have to wait on the still snoozing French presser.

Any tips for how to get a solid latte/capucino from that machine? What size pod? Thinking a strong dark double espresso as the base?

Seems like a fun way to dabble in fancy coffee but keep it simple. The pod prices are crazy steep. But tolerable in our use case — which is ancillary/back up to the main FP volume coffee production.

Any of you guys hooked on this drug?
