Thermapen cleaning?


 
I use a single paper towel and a drop of dish soap. Moisten part of the towel, add the soap, wipe the probe off with the wet soapy part, rinse off the probe under the sink, then wipe with the dry side of the paper towel.

You don't want to submerge the case or the part where the probe attaches to the case. But, running the probe under water has been fine, and wiping down the case with a damp paper towel has worked fine for me.
 
Kenji Lopez-Alt (MIT grad and SeriousEats website contributor) uses his Thermapen to check temperatures in cooking oil and pot water so there shouldn't be any issue with getting just the probe tip wet. You should avoid submerging the plastic casing though unless you have the newer waterproof one.

EDIT: Sorry, new to posting. Should have quoted the person I was replying to, but this is for the poster worried about getting the tip of the thermapen wet.
