Just wanted to send a note of thanks to Chris and all of the other good folks who do such a great job on this site. I just got my WSM and have made spare ribs and a couple of pork butts by following the great advice you all have provided. Will be doing turkey and salmon tomorrow for my wife's "health conscious" friends. Smoked pork is the ultimate health food because if lowers stress!

So often people who have such valuable knowledge are not willing to share it so generously. It is great that you all are willing to do that--following the directions from Weber would have gotten me nowhere! Being a rookie I doubt there is anything I will be able to add, but if I do learn anything useful you can be sure I will share it with this community. Thanks again for getting me off to a great start on my new obsession.
