With all the great BBQ shows on Food Network, I have been yearning for real BBQ for some time. I'm in So. Cal and BBQ selection 'round here is pittance compared to when I've visited TX or GA.

Due to size considerations, I didn't want to get a big oil drum style rig. After checking out the web, I finally decided to go buy an ECB as I understood they do a good job, in spite of the tending.

Then I found TVWB! I read up on the WSM and compared to the ECB, the choice was obvious. I've had the thing since Tues, three successful smokes so far (first was Pork Butt - pulled beautifully) then 2nd and 3rd were tuna from a recent catch. Absolutely perfect.

I just used an oven thermometer. Temp stayed nice and even. The pork was the best. Even my finicky 4 year old daughter loved it.

Thanks all for all the great reading, the web site and the Minion method which I used for the pork.

Next stop, brisket!
