Just wanted to say thanks for all the information. I have been cooking for about 15 years. I started on a 110 gallon tank that we grill ribs. butts and chicken on. Had a old brinkman bullet that I cooked on a few times before something happened to it. Cooked in one and the first bbq contest where our chicken got 6th place. Cooked at a lot of tail gates and back yard parties. About a year ago I saw one of the WSM SMOKERS at ace hardware already put together on display it was the last one and picked it up for 69 buck. Only used once or twice as must of the cooking was done on the big grill even for the weekend family cooks. Broke it back out tried it once or twice and the food was better than the grill. Found this web site and tried some long cooks using the minion method and it rocks. I just set it up play with the temp a few times and it cooks itself. The best part is the food is awesome.
