R Ryan Burger TVWBB Member Nov 7, 2012 #3 Out of laziness I don't use a thermometer anymore...I aim for 225 lid temp which equals out to be around 250 on my 22.5 bullet. This only applies when I'm using top grate only. Bottom grate runs much hotter without water in the pan
