What do you base your temperatur on--dome or grill? On my last StL rib cook, I had a 25dgr difference between grill and dome after 4 hours.

Out of laziness I don't use a thermometer anymore...I aim for 225 lid temp which equals out to be around 250 on my 22.5 bullet. This only applies when I'm using top grate only. Bottom grate runs much hotter without water in the pan
