Temp variation w/ Polder

I have an older single probe Polder. I notice that the when I place the probe in my oven to verify temp, the "oven" temp is typically 30* higher than the "food" temp. Why is this? The probe is off the rack, supported by two corks; so no metal is touching the rack.
