I’m 7 hours into a pork butt and I have been having temp issues all day. Started way too hot and with bottom vents all closed sticks at like 250. Not a huge deal cause that’s fine to cook at however I noticed a huge difference between grate and lid temp as seen in th photo. Grate is showing 250 and lid 205. I have a smoke from thermoworks.
Should I just stick with grate temp or do I want to get it a bit hotter?
