Temp for sliced pork shoulder....

At what internal temp should i pull them for sliced pork?? I've seen all temps from 160-190. I'll be making pernil for some cuban sandwiches this weekend, which looks pretty damn tasty. And i'm gonna try to make some cracklins since i'm removing the skin so we'll see how that goes.
 
yep, for sliced i do it to about 180 also. i let it rest but loosely covered. sliced is my prefered way. not that i don't like pulled pork.
 
I go 165 for sliced and 190 for pulled. Why go higher on the sliced? Again it is done when it is done so if it is tender it is done.
