temp didn't increase in turkey....

the temp didn't increase in the brease probe after I took the turkey of the smoker...I took the turkey off at 162 using a polder probe and left it in and foiled...I expected it to rise 5 to 7 degrees...i guess it is still ok to eat...anyone else ever experience this..is 162 in the breast ok...i hope so...thanks...

Doug is on the right track. The cooking temp has everything to do with the rise during resting.

In Cook's Illustrated they talk about the rise in temp of prime rib cooked at different temps.i.e. cooked @ 200° the rise was only 1° during a 45 min. rest cooked @ 325°-350° 14°rise and the roast cooked @ 450° rose 24°
