Tandem pastrami, Cow's tongue and turkey

So this old thread is back, might be because I linked to it. :)
Thanks for all the kind words, I will be making more tounge this year.
To answer the question, I used a mixture of alder and junipher branches, with both blue and green berries still attached to the branches.

Thx for the info. Since I don't have either wood, I'll probably use a mixture of white oak, birch and apple woods. And perhaps I'll add some juniper berries to the smoke mix.

Does anyone out there recommend placing the j. berries in some foil that's been pierced with holes?

To be frank, I guess you will not be able to taste the difference between juipher berries mixed in with the wood or not. Dry them, grind them and add them to the smoked meat.
The only reason I burned them. is because I did not need them. I have enough already. I can find them right outside my door, and I can pick fresh 2 years old berries when I need them.
