Taking Pork Butt to 200

I am serving my PB around 6pm today its at 185 now 11:30am. Should I let got to 200 205 or pull of at 190 foil and cooler?

It will continue to cook and tenderize by its own residual heat in the cooler-- feel free to pull it off at 190°.
 
Well i've pulled them at 190, 195, and 200. I like to render as much fat out as possible so you could go to 200 with no ill effect to the butt. I like the ones taken to a higher temp 200 better than the ones pulled off at the lower temps. It just breaks down more of the fat and such and is very tender. It'll be good no matter what temp you decide on. As Doug said the temp will still climb after pulling it off and it will still continue to cook for a little while wrapped in foil and resting in the cooler.
 
I think 190 is the minimum for the pork to really be "pullable". 195-200 is even better. I made two butts yesterday and couldn't even pick them up off the grill without them falling apart, they basically pulled themselves. Delicious.
