Did a couple of inch thick T bones on the WSM again tonight. Pour just a little Dale's steak seasoning on each, black pepper each side. While steak is sitting light the coals, chimney about 1/2 to 2/3 full of Kingsford, set it on the deep fryer burner and in less than 10 min coals are ready to dump in WSM 3-4 pieces of hickory for flavor, set the top rack on coals. While rack's get'n hot, retrieve the steaks, 7-8 min on each side and off the come med to med well every time, dome temp pegs my max temp reading of 400F. Total time 35 -40 min and these baby's are soooo good.
