Sweet spicy pecan recipe


 
No need to use egg white. I've never bothered. Use a little fat - butter or oil (I prefer the former) - and either do them in a nonstick on the stove or in the oven.
 
Pecans, peach preserves, habanero, garlic powder, salt and EVOO. Blend preserves, habanero and EVOO, toss wit the rest and toast on grill or smoker (yum!). Keep the temp down and watch carefully -- pecans burn easily.

Use habaneros to your level of tolerance. These are fantastic!

Sweet & Spicy Nuts
My friend from another forum worked in a bakery where he made spiced pecans. Recipe from JetFan27, October 29, 2010.


I made a simple syrup of sugar and water at a 1-1/2 to 1 sugar to water ratio, or there about. Then I added some cinnamon, cayenne, smoked chipotle powder and salt. Brought to a boil and dump the nuts in. You can use any kind of nut you like. Soak in the mixture for 5 minutes or so. While that is soaking, on a sheet pan or a bowl, mix some sugar, salt, cinnamon, cayenne, smoked chipotle powder and blend together. Take the nuts out of the syrup and drain well. Dump into the dry mix and stir. Shake off excess dry mix and put on a greased sheet pan and bake at 350 for five minutes or so and stir them to turn them and bake for another five to ten minutes. They will be nice and crunchy. They are done! Enjoy them.

This would be great Christmas presents, especially packed in a pretty canning jar with raffia and a label tied around the jar just below the top.
 
Medium sauce pot, medium/high heat.

Tbs or two of butter,
1 cup or so Bourbon (Evan Williams is good, cheaper than Mr Daniels!),
3 cups or so sugar,
Heat while stirring until all sugar is dissolved,
Remove from heat and add a tsp or so Vanilla,
Add a couple pounds of raw pecans and stir until well coated,
Spread on a cookie sheet and put in 350 oven for about 5 minutes, stir then leave for 5 more.

They are good warm or cold!

As you can tell I am not to exact with measurements! If you feel like more sugar or less, or bourbon, just whatever sounds good to you! Not all will stick to the nuts, and there will be some leftover very tasty sugar when the nuts are all gone. My kids FIGHT over that stuff!
