Very elegant Cliff. The S&T looks wonderful - nice technique on the 'chokes - I'm going to give that a spin if I can ever get some decent ones down here in NOLA...

Really nice job with plating the scallops, Cliff…looks like it belongs in a food magazine. The presentation of the scallops is so eye-catching that I almost forgot to look at those perfectly cooked filets.
