Sunday Babybacks on the WSM

I picked up 2 nice looking babyback racks on Saturday for a Sunday smoke on the WSM

Prepped and ready to go

WSM with a Soo's Donut load of KBB, 2 chunks each of hickory and pecan

Coals poured

Racks loaded on and ready for smoking. Bowl wrapped, but no water

Smoked at 240F for about 3 1/2 hours with some spritzing of water to keep moist for a full ride - no wrap

Served with some mac & cheese and cornbread (sorry - no pics)

Overall they were really good, but a tad drier than when I wrap. We finished them all in one sitting - so the family didn't complain too much. ;)

Great looking ribs. I do wrap my ribs sometimes but would like to find a method for keeping them moist without wrapping. I might try wet brining a rack sometime and see how that goes. It works great on pork chops - so why not ribs? When/if I try, I'll make sure the rub is low in salt.
