I have checked everywhere locally and cannot find Morton's Tender Quick. However, I was in Amish Country last weekend and figured they would carry it. Sure enough every local store had an ample supply. When I bought it, the lady told me that she had all 3 things I needed. They had the Tender Quck, liquid smoke, and bags of Morton's Sugar Cure. I haven't heard the sugar cure discussed on the board. Can anyone tell me what the different is and how to use it?

Sugar cure is used on hams by many, I have also used it on salmon, leave out the hickory flavoring.
It is an older fashion cure than TenderQuick but it has it's uses.

It contains salt, sugar, propylene glycol, sodium nitrate and sodium nitrite, a blend of natural spices and dextrose (corn sugar). Morton? Sugar Cure? (Plain) mix can be used interchangeably with Morton? Tender Quick? mix.
