I will smoke 2 seven pound boneless New York strip loin in my Weber Bullet at 225-250 F Did anyone had experience with this cut?Approx. how long will it take to reach 125F?
I did do the deed.salt,pepper,garlic slivers into the fat cap.
Lightly smoked with apple-wood, at 225-230 F to a perfect 125 F.Rested 30 minutes
The strip roast had a 1/4 inch fat cap.
