Hubby and I are going on our first camping trip of the season this weekend /infopop/emoticons/icon_biggrin.gif and our plan is to bring the WSM and the Jumbo Joe. /infopop/emoticons/icon_biggrin.gif /infopop/emoticons/icon_biggrin.gif (can ya tell I'm looking forward to it?)
We will leave on Thursday and come back Monday. We're on sort of a tight budget, so I'm not going to get as extravagant on the food as I normally do. I'm going to pick up a pork shoulder from Costco and do an overnight cook Thursday night. My plan is to pretty much live on pulled pork sandwiches and beer all weekend.
My question is, will the cooler suffice to keep the leftover pork cold enough for safety? We have a heavy-duty Coleman cooler and will keep it well stocked with ice and will keep the cooler in the shade. The pork will go into watertight plastic containers. If we keep the containers buried in the ice, think we'll be safe enough?
