Yesterday was a cracking weather in Melbourne, perfect for firing up the grill. Threw on this 6.8kg Stone Axe MB 8-9 Aussie Wagyu brisket, and it did not disappoint. The marbling was stunning, and it was rubbed to perfection with Hardcore Carnivore Black.
It ran beautifully on the Weber Charcoal Summit for nearly 10 hours at 250f, then rested for just over 2 hours.
This was also a great opportunity to break in my new Australian Brisket Board!
