Ive been using my wsm for about 6 years now. Still amazed at how it holds temp. Started butt at eight am. full ring of k blue. water in the pan this time and all vents wide open. its been rock solid at 250 for 9 hours now. truely amazing!!

I have two (18.5 & 22.5) and have yet to use either (my Performer and kettle have served my needs so far this season). The WSMs are great pieces of cooking equipment, and about as good as you can get in terms of capacity and ease of use per dollar.

You shouldn't need all vents wide open for an 18.5. Might be using more fuel than needed, but water (with a 212 degree boiling temp) is masking it by keeping the temp at cooking level stable.

But really, please stay with what's working for you.
 
i usually dont use water... however this cook i did. And i think you are correct in saying due to the water i needed all vents open. In the past when i do not use water i usually have all bottom vents closed by around two thirds. Happy smokeing all
