For ribs, I use 2:1 Apple Juice to Apple Cider Vinegar.

For pork butt, I use 1:1 Apple Juice to Apple Cider Vinegar.

This past weekend I did ribs over brisket. Basted with 2:1 Apple Juice/Apple Cider Vinegar until the ribs were done then finished brisket with just Apple Juice baste.
 
70 % olive oil and 30 % balsamic vinager. I baste after 12 hrs of uninterrupted smoking and then baste every hour after that.

(But not enough to wash off the rub.)
 
Try 1 part Apple Cider Vinegar, 1 part water and seasoning salt ... Wonderful spray...
