Spray question

OK, I'm very new to the world of cooking BBQ, but I have been eating it for as long as I can remember. Here soon I'm going to order an 18.5" WSM, and I think my first cook in it will be the Basic Baby Back Ribs described on this site (http://www.virtualweberbullet.com/rib4.html).

Chris advises that when the ribs are almost done, that you spray them with apple juice and then cook for a little bit longer. Now, I'm not a big fan of apple juice, and I was wondering if anyone thought spraying them with lemon juice would make a big difference? I'm a big fan of lemons, and put them in every drink I get (even soda pop), and will commonly eat them plain, but I'm not sure how lemon juice would affect the taste of ribs. Any thoughts?
 
Hi Chris and welcome, There's no need to spray them with anything. I've never sprayed or mopped anything. Just a waste of time IMO. You would have to spray and or mop so many times for it to have effect of the meat, that it would take forever for the ribs to finish, because of taking the lid off so many times. Taking the lid off adds about 10-15 min to your cook for each time you remove the lid.
