Spicy Orange Beef

1 lb. beef flank or round steak
2 TB. oil
1/4 cup slivered orange peel
1 minced clove of garlic
1/2 tsp. ground ginger
2 TB. corn starch
1 cup beef broth
1/4 cup soy sauce
1/4 cup dry Sherry
1/4 cup orange marmalade
1/2 tsp. crushed dried red pepper

Thinly slice steak on the diagonal. In WOK or large skillet, heat the oil over medium-high heat. Add beef 1/3 at a time. Stir fry 3 min. or until browned. Return all beef to wok. Add orange peel, garlic and ginger. Stir fry 1 min. Stir together the corn starch, broth, soy sauce, sherry, orange marmalade and the dried red pepper. Stir into beef. Stirring constantly, bring to a boil over medium heat and boil 1 min. Serve over rice. Makes 4 servings

This turned out to be very tasty. DH added a bag of mixed frozen stir-fry vegetables. Our new WOK worked great.
