~Spicy Chile Wing Recipe~
3 large shallots
6 cloves garlic, peeled
1 piece (1 inch) fresh granger, peeled
2 to 10 Thai Chile, Serrano peppers, or small jalapeno peppers, stemmed, seeded and coarsely chopped
1/2 cup veg oil
2 tbs soy sauce
2 tbs sweet soy sauce OR 1tbs each regular soy & molasses
1 tea Chinese 5-spice powder
Combine shallots, garlic, ginger & chiles in a food processor & process to smooth paste. Add 1/4 cup of the oil, the soy sauces, & the five-spice powder & process.
Heat remaining 1/4 cup of oil in a wok or small, heavy skillet over med heat. Add the spice paste and cook, stirring constantly, until thick, brown. 8-12mins.
Put wings in large ziplock and add cooled spice paste and massage into wings. Cool in fridge for 6-24hrs.
