Spatchcocked chicken and sausage.


 
I’m doing jalapeño peppers, smoke cream cheese with raspberry Chipotle sauce. The wife is making a big pot of ham n beans….Gumbo of course French bread, cakes pies and other very unhealthy stuff….
 
I went to the store after work this evening, thinking about Sunday. And I paused for awhile in the cooler section - thinking about gumbo, but I did not go that way. This post is making me regret my decision...
 
I make gumbo "all the time" - I've never tried using smoked chicken. My andouille is usually smoked/precooked. Very interesting. May have to try it sometime. Nice looking bird and sausage for sure!
