Spares on the kettle


 
A slab of Hormel spares with only hanging pieces trimmed off. Slathered with mustard and a moderate dose of Honey Hog Hot from Meat Church.

Just waiting for the kettle to come up to 250. Royal Oak super-size briquettes and 3 medium chunks of Cherry Wood.

Not a good cook. Lots of nasty smoke that lasted for more than 2 hours. These briquettes would probably be OK if you lit them in a chimney, but I wouldn't advise using them for a snake, Minion or other method of that type. By the time I dared to put the ribs on, there were so many lit coals that I had a hard time controlling the temperature. Finally got them done long after supper time. Had to add more charcoal so,
even though I hadn't plan on wrapping, ended up doing so, with some butter, honey and more rub. Amazingly, the rack turned out well. Will definitely be using this rub again, but not this charcoal.
