Spare Ribs tonight

Well, the Bears killed the Browns and to celebrate: spare ribs for dinner. In between Goose Island IPA's and leaf blowing, I'll take pictures of the progress. 2 slabs of spare ribs rubbed with a modified Kevin K. rub and the tips and parts are on the bottom rack. This is 1.5 hours in.
 
Ribs look great!! I wish I had a team that could blow out someone!!! You are a lucky fan and are lucky to have those ribs in your future!!!!
 
After 3 hours at 240deg, 1 hour in foil at 240deg, and 30 mins no foil and brushed with an improv sauce - chopped up.


Sweet potato, wrapped in foil, cooked in the coals.


And plated with some vinegar and oil coleslaw.
 
This is the rib trimmings that were on the lower rack during the cook. I chopped it all up and put it in a freezer bag. Maybe I'll use it for beans or ABT's in the near future.


That is all for tonight. Let's see if I can stay up for this game 4.

After removing the foil I put them back on the smoker for 30 minutes. The last 15 minutes I brushed them once and the last 5 minutes I brushed them again.
