I'm trying the Jamaican Jerk Chicken recipe that Mike S. recommended so highly.

I've been checking and found out that the Jamaicans generally use pimento wood to smoke their chicken and pork.

I'm thinking of using apple wood to compliment the fruitiness of the Scotch bonnet chiles and will possibly throw some allspice (pimento) berries on the fire as well.

Does anyone have a source for pimento wood? Or any recommendations for a wood that might be close in flavor?

Thanks,
Rita

Rita,

We had a brief discussion of pimento wood on an email list I am on. Candy Weaver, who is affiliated with BBQer's Delight smoking pellet products, suggested a 50/50 mix of cherry and hickory as a substitute for those unable to obtain pimento wood.

Candy is quite experienced in all aspects of wood, BBQ etc, and, even though I have not had a chance to try this as of yet, I have every confidence that the combination will be complimentary to jerk.

Terrific, Gary!
I'm impressed. Is there any question that someone on this forum can't answer? /infopop/emoticons/icon_smile.gif

I'll give the hickory-cherry combo a try.
