Source for Wagyu brisket?


 
Ya know Ryan, there's gotta be wholesaler somewhere around us that is within driving distance and that handles Waygu for a good/fair price. I mean geez, we live in Illinois. I can't go down the road without seeing a cow.

I know of only two Wagyu growers in Ill. But they are stock breeders. Contact meat wholesalers, especially those that supply restaurants. Many if not most will sell direct to you with a minimum order, often just a case or two.

You can order from Arrowhead (wholesale only so be prepared with a dba and/or tax i.d.) or Paradise (retail - but call for brisket availability; they should be able to get it even if not listed on their site).
 
Rick, I would think you are right. I am going to ask at Alwan's meats in Peoria. But they are a retailer so they might be high.
 
So far, Paradise seems to be my best bet. I'm not that concerned about getting some wagyu for comps. I would just like to try one out to compare the difference to what I normally get. If the wagyu stands out that much then I may consider using them in comps.

A few of us local guys are considering taking a roadtrip out to Paradise. It's a 10 hour round trip but with three or four of us splitting costs we should be able to do it on the cheap.

What's the story on freezing wagyu? Is it recommended?
 
Well I figure if I'm going on an all day roadtrip, to a meat locker, with three other goofballs, I'm going to have to come home with more than one brisket. So yeah, I'll have to freeze one or two.

So Kev, in your opinion ... once I cook a wagyu am I not going to want to go back to my plain ol' choice angus packers?

Wouldn't it be cheaper or at least easier to have them shipped to you?
 
Probably not cheaper. I figure my share of the gas money will still be cheaper than shipping for a few briskets. Easier? Yeah, but a roadtrip with the boys ain't all bad. Go to breakfast, cruise to a nice meat market (we'll be like kids in a candy store), have some lunch and head on back. All the while laughing and joking the way guys can when the ladies aren't around. Nah, that won't be too bad.

You're right that doesn't sound too bad. I just don't have the time. Plus it is about another 3 hours or so round trip for me than it is for you.

I think that's quite likely. I know Minion switched to them some time ago and was quite happy about it. I assume this hasn't changed but have not seen him in a while. I like them over CABs no question.

If Paradise holds their meats at the same temps they are shipped in (~28?) so much the better as they will freeze better (pack well in ice when you get them). Or, simply let them wet-age in the cryo - depending on how many you buy. Find out the pack date when you pick them up (it will be on the case they were packed in originally, not on the cryo).

Ryan up here in Milwaukee we can get them from the local butcher who can order them in. Not the big box stores but in this case one of the Sendiks stores. I would think if you called talked to the manager of tyour local meat departments of some of the smaller stores in your area you might be able to get them to bring one in.

Interestingly they dont sell the brisket. Its what they order to grind for KOBE beef. I just happened to find out by asking what cut they grind. When they told me Brisket I just said don't bother to grind it for me I'll take it whole and was able to get it for 3.99/lb. Havent done one in over a year because the flavor is great but so much fat renders off you lose more weight that a regular brisket.

Its fun once in a great while! and quite tasty!!

If I can I'll try and find which meat purveyor brings in the kobe and if your butcher is resourceful and willing maybe he can get some for you (for alot less than mail order!!)
 
For you guys from Central Illinois, I work for sysco foods and have access to just about anything you want. The brisket is about $9 per lb, but I can get it in a couple days. Is there a way to PM someone on the board? I looked the other day but couldn't find out how to.
