soup recipes for the poor

Hey all. Where else should i go for this besides the reliable people at tvwbb? Im looking for a delicious yet cheap recipe for soup. Vegetable or garden vegies as main ingredients, or creative ideas would be awesome to lower price and optimize volume, it may prove helpful to people who are being more and more pushed into poverty by the economy. What do you guys have up your sleeves?
 
Back in my younger (single) days, I spent my money freely on wine, women, and song. The rest I wasted.

One of the staples I survived on was the 15¢ Top Ramen packets which I supplemented with rice, veggies, eggs, hot dogs, and almost anything else I thought would be acceptable in the pot. It's amazing how far your money can go with a little ingenuity (and necessity).

Soups are about as easy as cooking gets; just throw your main ingredients into a pot, and add water. Of course that's an oversimplification, but I'm sure others will chime in with specifics.

Your reference to cheap eats just brought me back to an earlier time...
 
I posted this BBQ Beef Soup recipe a while ago. Make it with hamburger or leftover BBQ beef. Could skip the meat altogether and load it up with your choice of veggies ... turnip, zucchini, cauliflower etc etc etc
 
See chilled soups for summer--do not miss the ajo blanco, a favorite. All gazpachos are faves of mine at this time of year.

Though I wrote this to include a ham bone (a good use for it), if you are not cooking a ham any time soon just leave it out. Sweet Potato Soup with Sour Cream and Minced Jalapeños

This has been a favorite of many friends, clients and customers over the years. Especially nice on a cool fall evening, I like it even in summer. Garlic Soup

This one, Caribbean Pumpkin Soup, is based on calabaza, a large squash that looks somewhat like a beige/tan pumpkin. The flesh looks very much like pumpkin or butternut squash, which can be used, as noted in the recipe, as a sub. I always make it at Christmas, but often make it in September, when the calabazas are plentiful in the garden next door.

Roasted tomato soup is always a winner--as is 'regular' tomato soup.

Also, some thoughts on chicken soup.

In restaurants, I always had at least two soups on the menu, often three. If there is anything you are looking for in particular...
 
Do what they used to do during the depression. It's cheap and very, very easy. Ketchup and hot water

I do not use a recipe but....

Roast a chicken in the oven.
In large stock pot, saute a large onion, a few cloves of garlic. If using some cabbage(cheap) add to the mix now.
Then I add 6-8 vegies. Whatever is fresh or available. One can of chopped tomatoes. Add water. Use chicken and beef base for salt and flavor. 3 parts chick to one part beef. Typically I add about 1/2 the amount of base called for relative to the volume of water added. De-bone and add the chicken.

All the carcass of the bird is simmered seperately and the licquid added to the soup. for more real flavor.

Spices: fresh black pepper, Italian seasoning, 2 bay....

The filler may be potato, rice, pasta....

Sorry I can't be more specific but chicken veg soup is like a BUTT-you can't screw it up.
 
Soups are one of my favorite things to make. I never use a recipe, just think of what I'm in the mood for and go for it. As Steve said, It's really hard to make a bad soup. My Mom used to make a really good cheap burger veggie soup. Off the top of my head here goes. Some burger, depends how much you are making and what you can afford, sausage can be subbed if you can get it cheaper, like bulk sausage, (not stuffed into casings). Some beef stock, boxed, canned or from cubes. Brown meat, add broth, a bay leaf or 2, and a good bit of onion, garlic, pepper. Seasonings, basil, oregano, or whatever you want and salt to taste. A good bit of ketchup (can sub a can of cond tomato soup), say if you used a qt of broth, at least a cup and a bag of frozen mixed veggies and cabbage if you like it. That's pretty much it. It was hearty and good. HTH
