I'm a fan of texasbbqrub, so I opted to try one of their recipes:
light coating of ballpark mustard
heavy coating of their original rub
In the past I've used a knife to pull the skin back from the shoulder to form more bark. Last night I decided to put rub on both sides of the skin and once done, cut up the skin into the meat. I added this concoction from the texasbbqrub newsletter:
after pulling:
1 stick of melted butter
¼ cup of Texas BBQ Rub
¼ cup of orange juice
1 to 2 tablespoons of red cider vinegar
the addition of pork skin and a stick of butter can't be too healthy but my family loved it. The oj in the taste profile was a little strange but good.
