Dry brining these TTs for tonight’s dinner.

Will do the mop and flip every 4 minutes method till 130° at dead center and then rest for 10-15 tented.

Maybe serve up a nice bottle of red and some baked pots with sour cream and butter. And some fresh Greek salad on the side.

Nice looking tri tip.

We used to never see the cut around here, but it's been showing up lately.

I may have to try it on the pellet cooker while I'm in experimenting mode.
