I got a WSM for Christmas and am getting ready to try it out! This queation I am sure will reveal me for the novice I am...when using the different woods, do I follow the directions and soak the wood for several hours prior to putting it on the coals? Thanks!

If they are woods chips...I would soak them. If they are wood blocks..I wouldn't.

Thanks, I am using the wood chunks and won't soak them! I am going to start with a salmon as my first effort, then next week a Pork Butt, then I am having a group over to deep fry some turkeys, and for them I am going to smoke some ribs to snack on while we hang out! This site is awesome, and the help is great. thanks.

Todd,

If you are starting with Salmon try and use Apple, Cherry or Alder. Cherry is my favorite. If you need good wood look at the top of the links page on http://www.pnwba.com.

If you are interested the Pike Place Market BBQ competition is February 15th. Come on by and say Hi.
