Thanks for the idea. On an earlier post I said I would try this. Well, I fixed it last night and my wife raved. I subbed mozzarella for the cheese. Below are prep pictures of the onion and peppers cooking (separately), as well as the smothered chicken. So tasty we ate before taking plated pictures. Thanks again,
